Preheat your oven to 350°F (180°C). Line a muffin tray with 10 muffin liners.
Add the bananas, oil, and eggs to a blender. Blend until smooth and creamy.
2 medium, very ripe bananas (about 170g), ¼ cup (rapeseed) oil , 2 eggs
In a large bowl, whisk together the flour, baking powder and baking soda.
1 ¼ cup white whole wheat flour, 2 tsp baking powder, ½ tsp baking soda
Pour the blended mixture into the bowl with the dry ingredients. Add the grated carrot and zucchini (no need to squeeze out any moisture). Stir gently until everything is just combined. Don’t overmix.

Divide the batter evenly between the muffin cups. Bake for 20-23 minutes, or until a toothpick inserted into the centre comes out clean.
Let the muffins cool in the tray for 5 minutes before transferring to a wire rack. Let cool completely before peeling off the liners- otherwise they tend to stick a bit.
